Cilantro-Lime Grilled Chicken & Tomato-Avocado Salsa

Wow, August 1st already. Only four more weeks of summer. It just doesn't feel like enough. I cringe when I see all the back-to-school displays popping up in stores. I'm not ready to let go of summer quite yet.














Light, fresh and easy, this chicken and salsa are just oozing with summer time goodness.

Cilantro-Lime Grilled Chicken
- 1 pkg boneless, skinless breasts
- 1 small bunch of cilantro, chopped
- 1 lime
- salt and pepper

Season the chicken with salt and pepper, sprinkle with chopped cilantro and squeeze the juice of one lime over top. Zest the lime and add it to the marinade. Marinate for at least a couple hours to overnight.
Once marinated for sufficient amount of time, toss on the BBQ!

Avocado Salsa
- 2 small avocados, cubed
- 1 pkg cherry tomatoes, sliced in a half
- 1 medium onion, chopped
- 1 bunch cilantro, chopped
- juice of 2 limes
- salt and pepper

Mix all the ingredients together and serve immediately.

ENJOY!

  1. I love this recipe! So simple and delicious. I am mostly happy summer is coming to and end and ready for fall, but I'm not sure I'm looking forward to the schedule/homework/PTA stuff that is coming up soon. Why is my kid's school so much work for ME?! ;)

      I love fall, it's my favourite season actually but I am absolutely terrified of what our schedule is going to be like! This is the first year both the kids & I will be in school full time. Again, absolutely terrifying, lol.
